1. Location:
Our olive farm areas are located at 800 meters
above sea level. This altitude provides a
natural protection against the olive fly (lat.
Dacus oleae) which does not exist at these
altitudes. This insect hurts the olive skin
and therefor causes an oxidation process in
the affected olives , which leads to high
acidity levels and undesired metallic taste
of the olive oil. Really good olive oils origin
from mountain regions. |
